He emphasized that just as a plant yields fruit, the "byproduct of kombucha is the tea—and that's the outcome of this miraculous fermentation that takes place in every batch."

This perspective comes as GT's Living Foods, the parent company of Synergy Kombucha, celebrates its 30th anniversary as a pioneer in the living foods movement. Founded by Dave in 1995, the company emerged from his personal experience with his mother's cancer diagnosis, during which she consumed home-brewed kombucha. This origin story solidified Dave's commitment to sharing what he believed to be a healing beverage with the world.

GT's Living Foods has grown to become a dominant force, holding approximately 40% of the U.S. kombucha market and generating hundreds of millions in annual sales. The company recently appointed Jon Clancy as its first-ever President in March 2025, signaling a new chapter for the established brand. This milestone is accompanied by initiatives like the "Feel the Synergy" campaign and the introduction of a "The Real Kombucha" wordmark, reinforcing its commitment to authentic fermentation amidst increasing market competition.

However, the company's journey has not been without controversy. A Los Angeles Superior Court ruling in 2023 found GT's Living Foods responsible for "deplorable and abusive and disturbing working conditions" at its Vernon, California facility between 2010 and 2014. The court awarded over $450,000 in restitution to 11 workers, with the judge questioning GT Dave's credibility during testimony.

Despite these legal challenges, GT's Living Foods continues to innovate, launching new products such as AURA Collagen Tea and fan-created flavors like Pomelo Pink Lemonade. The company also achieved a TRUE Gold certification for zero waste excellence in 2024, highlighting its efforts in sustainability.
