
GT Dave, founder of Synergy Kombucha, recently reflected on three decades of pioneering the fermented beverage market, emphasizing a steadfast commitment to the product's "soul" over pure commercialization. "When things become commercialized, whether people know it or not, it loses the soul. I didn't want to do that," Dave stated in a new podcast episode from Tetragrammaton. He articulated a vision for his products to be "life-changing" and to "nourish and heal," rather than merely recreational beverages.
Founded in 1995, GT's Living Foods, the parent company of Synergy Kombucha, emerged from Dave's personal experience with his mother's cancer diagnosis, during which she consumed home-brewed kombucha. This origin story cemented his dedication to sharing what he believed to be a healing product. The company has since grown to dominate the U.S. kombucha market, holding approximately 40% market share and generating hundreds of millions in annual sales, without external investors.
Dave's philosophy centers on maintaining the integrity of raw, authentic fermentation, a stance reinforced by the company's "The Real Kombucha" wordmark and recent "Feel the Synergy" campaign. He has consistently resisted pasteurization and other shortcuts, which he believes compromise the product's living essence. This commitment extends to the company's manufacturing processes, with GT's Living Foods achieving TRUE Gold certification for zero waste excellence in 2024.
Despite its market success and mission-driven branding, GT's Living Foods has faced scrutiny. A 2023 Los Angeles Superior Court ruling found the company responsible for "deplorable and abusive and disturbing working conditions" at its Vernon, California facility between 2010 and 2014, awarding over $450,000 in restitution to 11 workers. Dave's credibility during testimony was also questioned by the court.
The company continues to innovate, expanding its portfolio beyond kombucha to include products like AURA Collagen Tea and fan-created flavors such as Pomelo Pink Lemonade. In March 2025, GT's Living Foods appointed Jon Clancy as its first-ever President, signaling a new chapter for the established brand.
